2024 Gautheron Chablis Vieilles Vignes
Old Vines, Deeper Roots — A More Concentrated Expression of Chablis' Legendary Kimmeridgian Terroir
The Vieilles Vignes cuvee is Domaine Gautheron's most concentrated village-level expression — sourced exclusively from the estate's oldest vines, whose deep root systems draw more complex mineral compounds from the Kimmeridgian subsoil, producing fruit of greater intensity, depth, and structural complexity than younger plantings.
Tasting Notes
Pale gold with a bright, crystalline clarity. The nose is immediately focused and precise — green apple, lemon zest, and white grapefruit lead, followed by a compelling thread of wet flint, crushed chalk, and oyster shell. The old-vine concentration adds a subtle depth — white blossom, toasted almond, and a saline iodine-tinged minerality. On the palate, medium-bodied with vibrant mouthwatering acidity, a silky texture, and a long laser-focused mineral finish.
Food Pairing
The flinty precision and vibrant citrus acidity of the 2024 Gautheron Vieilles Vignes Chablis make it one of the most classically food-friendly whites. We love it with Hokkaido Sashimi-Grade Sea Scallops from My Meat Man — seared in brown butter with lemon, the sweet plump scallops are a magnificent match for the wine's oyster-shell minerality and old-vine Kimmeridgian concentration.
Why This Is a Smart Buy
At HK$229, this represents exceptional value for an old-vine, single-selection Chablis from one of Fleys' most respected family domaines.
