2022 Simonnet Febvre Chablis
2022 Simonnet-Febvre Chablis — Classic Village Chablis from One of the Appellation's Oldest Houses
Simonnet-Febvre is one of Chablis' oldest and most respected houses, founded in 1840. This village Chablis is a textbook expression of Kimmeridgian limestone terroir — unoaked, mineral-driven, and bone-dry, capturing the pure essence of one of Burgundy's most distinctive appellations.
Tasting Notes
Pale gold with a green shimmer. Lemon zest, green apple and white pear lead the nose, supported by the unmistakable chalky oyster-shell minerality of Kimmeridgian limestone. On the palate, light to medium-bodied with bright natural acidity, a clean focused mid-palate, and a long mineral finish.
Food Pairing
Classic Chablis pairs beautifully with pristine shellfish. We love it with Hokkaido Sashimi-Grade Sea Scallops from My Meat Man — seared in brown butter with lemon, the sweet plump scallops are a magnificent match for the wine's bone-dry minerality and bright Chablis acidity.
Why This Is a Smart Buy
Authentic Chablis from a historic producer with nearly 200 years of winemaking heritage. True Kimmeridgian mineral character at a price that remains excellent value.
