A Premier Cru of Rare Warmth and Structure — From One of Chablis' Most Respected Family Domaines
Les Fourneaux is one of Chablis' most distinctive premier cru climats — a south and south-east facing slope on the right bank of the Serein river, whose warmer aspect and deeper Kimmeridgian soils produce premier cru Chablis of a richer, more structured character than many of its left-bank counterparts.
Tasting Notes
Bright gold with a luminous, crystalline clarity. The nose is more complex and layered than a typical village Chablis — ripe lemon, white peach, and green apple lead, followed by the classic Kimmeridgian signature of wet flint, crushed chalk, and oyster shell, with an additional note of warm brioche and toasted almond. On the palate, medium to full-bodied with excellent structure — vibrant focused acidity, a richer textured mid-palate, and a long mineral saline finish.
Food Pairing
Les Fourneaux' richness and mineral depth make it superb with refined seafood. We love it with Hokkaido Sashimi-Grade Sea Scallops from My Meat Man — seared in brown butter with a lemon beurre blanc, the sweet plump scallops are a magnificent match for the wine's brioche, toasted almond and Kimmeridgian mineral structure.
