2018 Moss Wood Wilyabrup Cabernet Sauvignon
A Legendary 98-Point Margaret River Cabernet from One of Australia's Founding Estates — Monumental, Structured and Built for Decades of Cellaring
My Wine Man on Moss Wood
Moss Wood was established in 1969 by Bill and Sandra Pannell — one of the founding estates of the Margaret River wine region and a benchmark producer of Australian Cabernet Sauvignon for over five decades. The Wilyabrup Cabernet is the estate's flagship wine, sourced from the original Wilyabrup vineyard planted over 50 years ago, where old vines now produce fruit of extraordinary concentration, purity and depth.
Margaret River's maritime climate, gravelly loam soils and long, even growing season give this wine its signature: structure, freshness and the ability to age for decades while maintaining balance and precision. The 2018 vintage is widely regarded as one of the greatest Moss Wood Cabernets ever produced.
At HK$688, this is a serious collector-level Cabernet from one of Australia's most important wineries.
Tasting Notes
Deep, concentrated dark crimson in the glass. The nose is powerful yet refined — blackcurrant, cassis and ripe blackberry form the core, layered with cedar, tobacco leaf, graphite, dark chocolate and subtle dried herbs.
On the palate, the wine is full-bodied and tightly structured, with remarkable depth and layering. Firm yet polished tannins frame waves of dark fruit and savoury complexity, carried by bright natural acidity that keeps everything in balance. The finish is exceptionally long, persistent and structured — a hallmark of great Wilyabrup Cabernet.
Food Pairing
A wine of this scale demands equally serious food.
We love it with Grass Fed Cape Grim Tomahawk Steak from My Meat Man — the charred crust, rich marbling and primal presentation of the cut match the wine's depth, structure and intensity perfectly.
It also pairs beautifully with roast lamb shoulder, aged ribeye, venison, or mature hard cheeses such as aged cheddar or Parmigiano Reggiano.
A true special-occasion pairing wine.
