Togouchi Japanese Blended Whisky 8 Years Aged 700 ml
Aged in a Railway Tunnel — Japan's Most Uniquely Matured Whisky
Togouchi is one of the most distinctive and captivating stories in Japanese whisky — a blended whisky matured in a decommissioned railway tunnel deep in the mountains of Hiroshima Prefecture, where the constant cool temperature, high humidity, and complete darkness create ageing conditions that no conventional warehouse can replicate. The Togouchi tunnel — originally built as part of a railway line through the Chugoku Mountains — maintains a year-round temperature of approximately 10–14°C and a humidity of around 80%, conditions that slow the maturation process and allow the whisky to develop a remarkable gentleness, smoothness, and complexity over time. The 8 Year expression blends carefully selected malt and grain whiskies, each aged for a minimum of 8 years in this extraordinary environment, to produce a whisky of genuine elegance and character that is unlike anything else in the Japanese whisky category. At HK$749 for 700ml, this is one of the most interesting and rewarding Japanese whiskies available in Hong Kong — a bottle with a story as compelling as its flavour.
Tasting Notes
Pale, warm gold in the glass with a gentle, inviting clarity. The nose is soft and immediately appealing — honey and vanilla lead with a light sweetness of ripe apple and pear, a delicate floral note, and a subtle warmth of toasted oak that speaks to the 8 years of tunnel maturation. On the palate, Togouchi 8 is smooth, light-to-medium bodied, and beautifully balanced: honey and gentle fruit up front, with a soft grain sweetness building through the mid-palate alongside a delicate spice — white pepper and a whisper of cinnamon — that adds structure without ever disrupting the whisky's signature gentleness. The tunnel's cool, humid conditions are unmistakable in the texture — silky, refined, and free from any harshness. The finish is clean, warm, and softly sweet — honey, vanilla, and gentle oak fade gracefully, leaving the palate refreshed and thoroughly satisfied.
Signature Cocktails
Togouchi Highball
- 50ml Togouchi 8 Year
- 150ml soda water (chilled)
- Ice (large cubes)
- Garnish: thin slice of fresh apple or lemon twist
Method: Chill a tall highball glass in the freezer for at least 10 minutes before serving. Fill with large ice cubes. Pour in the Togouchi slowly over the ice. Top gently with chilled soda water, pouring down the side of the glass to preserve the carbonation. Stir once, very gently. Garnish with a thin slice of fresh apple to echo the whisky's own gentle fruit character, or a lemon twist for a brighter, more citrus-forward finish. Togouchi's honey sweetness and silky tunnel-matured texture make it an exceptional Highball base — light, elegant, and endlessly refreshing.
Togouchi Whisky & Ginger
- 50ml Togouchi 8 Year
- 150ml premium ginger beer (chilled)
- 10ml fresh lime juice
- Ice
- Garnish: wedge of fresh lime, slice of fresh ginger
Method: Fill a tall glass or copper mug with ice. Pour in the Togouchi and fresh lime juice. Top gently with chilled ginger beer. Stir once to combine. Garnish with a lime wedge and a thin slice of fresh ginger. The ginger beer amplifies Togouchi's gentle spice and honey sweetness beautifully, while the lime adds a bright citrus lift that keeps the drink fresh and lively. The result is a whisky and ginger of real elegance — light, refreshing, and completely distinctive, with the tunnel-matured smoothness of Togouchi making every sip a genuine pleasure.
