Tasmania's Most Exciting Cool-Climate Chardonnay — Poised, Fresh, and Beautifully Composed

Ghost Rock's Estate Chardonnay is a textbook cool-climate expression — poised, fresh, and beautifully composed, with all the hallmarks of Tasmanian Chardonnay working in perfect harmony.

My Wine Man on Ghost Rock. Ghost Rock Vineyard is situated in the Camdale district of north-west Tasmania — one of the island's most distinctive wine-growing areas, where the combination of maritime influence, cool temperatures, and well-drained soils produces fruit of exceptional natural acidity and flavour intensity. The estate was established by the O'Brien family and has quietly built a reputation as one of Tasmania's most consistent and quality-focused producers.

Tasting Notes

Bright pale straw with a green tinge. The nose is elegant and classically cool-climate — lime blossom, lemon peel, and almond meal, with hints of biscuit and chalk adding complexity and a fine mineral thread. On the palate, generous weight with a through-line acidity that keeps the flavour going — white peach, citrus, and a subtle creamy texture, finishing clean, long, and refreshing.

Food Pairing

The lime blossom freshness, almond meal complexity, and mineral precision of the 2024 Ghost Rock Estate Chardonnay make it a lovely match for Bare Bird Premium Free-Range Whole Boneless Butterflied Chicken from My Meat Man — roasted with lemon, garlic and thyme or spatchcocked and grilled over charcoal, the clean delicate flavour is a magnificent match for the wine's bright acidity and creamy texture.

Why This Is a Smart Buy

Estate Chardonnay from one of Tasmania's most respected cool-climate producers at HK$169 is outstanding value. Mineral precision, natural acidity, and elegant fruit character at a price that significantly over-delivers.
