2023 Vasse Felix Filius Cabernet Sauvignon
A Margaret River Gem from One of Australia's Most Storied Estates
Vasse Felix is the founding winery of Margaret River — established in 1967 by Dr Tom Cullity, who believed this remote corner of Western Australia could produce world-class Cabernet Sauvignon. More than five decades later, that conviction has been thoroughly vindicated. The Filius label — Latin for "son" — represents the next generation of Vasse Felix Cabernet: approachable in youth, yet built with the structural integrity and regional character that defines the estate's flagship wines. Winemaker Paul Hotker farms with precision and crafts with restraint, letting Margaret River's gravelly loam soils and maritime climate do the talking.
Tasting Notes
Deep ruby with a vivid crimson rim. The nose opens with classic Margaret River Cabernet aromatics — blackcurrant, dark plum, and a subtle bay leaf herbaceousness, underpinned by cedar and a whisper of dark chocolate. On the palate, the wine is medium-full bodied with fine, supple tannins and well-integrated acidity. Flavours of cassis, mulberry, and graphite carry through to a clean, persistent finish. Polished and precise — a textbook expression of the region at an accessible price.
Style & Drinking Window
Medium-full bodied with fine-grained tannins and excellent structure for the price point. Drinking well now and will continue to develop through 2030. Decant for 30 minutes to open up the fruit. Serve at 16–18°C.
Food Pairing
The classic cassis and cedar character of the 2023 Vasse Felix Filius Cabernet Sauvignon make it an outstanding match for beef from My Meat Man. The wine's fine tannins and dark fruit profile complement the richness of steak beautifully — whether grilled over charcoal, slow-roasted with rosemary and garlic, or served as a classic roast with red wine jus.
Why This Is a Smart Buy
At HK$199, the Filius Cabernet Sauvignon delivers the Vasse Felix house style — precision, restraint, and genuine Margaret River terroir — at a fraction of the cost of the estate's flagship Cabernet. This is a wine from Australia's most historically significant Cabernet region, made by one of its founding estates. Exceptional value for everyday drinking or gifting.
