2023 Simonnet Febvre Chablis Villages
A Step Above — Village-Level Chablis from One of the Appellation's Most Historic and Trusted Houses
Simonnet-Febvre is one of the oldest and most respected wine houses in Chablis, with roots stretching back to 1840. The Chablis Villages designation represents a step above straight Chablis — sourced from the best-situated village-level sites across the appellation, on hillsides and slopes with superior sun exposure and deeper Kimmeridgian subsoil.
Tasting Notes
Pale yellow-green with a bright luminous clarity. Ripe pear, melon, and lemon zest lead, followed by mineral nuances of wet flint and chalk. The 2023 vintage adds a touch of extra fruit generosity — a subtle white peach and white blossom note. Medium-bodied with excellent volume, vibrant acidity, and a long tangy saline finish.
Food Pairing
The Chablis Villages' ripe fruit and saline finish pair beautifully with refined seafood. We love it with Hokkaido Sashimi-Grade Sea Scallops from My Meat Man — seared in brown butter with a squeeze of lemon, the sweet plump scallops are a magnificent match for the wine's ripe pear, wet flint and saline Chablis Villages finish.
Why This Is a Smart Buy
