Burgundy's Best-Kept Secret — A Forgotten Appellation Revived by One of Chablis' Most Historic Houses

Simonnet-Febvre is one of the oldest and most respected wine houses in Chablis, with roots stretching back to 1840. The house has taken on one of Burgundy's most remarkable revival projects: the resurrection of the Coteaux de l'Auxois appellation. In its 19th-century heyday the vineyard extended over nearly 5,000 hectares — celebrated at the Court of Versailles and prized across France. Then came phylloxera, two world wars, and the long slow abandonment of the land. Simonnet-Febvre has changed that, working with just 15 hectares of vines on ancient limestone slopes.


Tasting Notes

Pale gold with a bright luminous clarity. Citrus zest, ripe pear, and white peach lead, followed by notes of white blossom, fresh herbs, and a subtle chalky minerality. Light to medium-bodied with vibrant refreshing acidity, a clean silky texture, and a long citrus-driven finish with a gentle mineral edge.

The Auxois Chardonnay's fresh citrus character makes it superb with grilled seafood.
