My Wine Man on Bird in Hand

Bird in Hand takes its name from a historic gold rush-era mine in the Adelaide Hills, and the estate has been producing wines from this cool-climate region since 1997. The decision to label this wine Syrah rather than Shiraz is deliberate — a signal of intent. Where the Two in the Bush Shiraz is built for immediate enjoyment, the Syrah is a more serious proposition: structured, focused, and made to age. Adelaide Hills' cool temperatures and elevation give the wine the freshness and aromatic lift that defines the style.

Tasting Notes

Intense ruby with purple edges. Lifted aromatics of raspberry, violet, white pepper, and rosemary on the nose. The palate is medium-bodied with supple fruit weight and savoury notes of toasted aniseed and smoked spice on the mid-palate. Fine, focused tannins give the wine tremendous structure and length — a wine built to develop beautifully in bottle for over 10 years.

Style & Drinking Window

Medium-bodied with fine, focused tannins and a cool-climate aromatic character. Drinking well now with decanting, and will continue to develop through 2030–2033. Decant for 1 hour to allow the aromatics to fully open. Best with food — duck, lamb, charcuterie.
