A Waipara Gem from One of New Zealand's Most Celebrated Family Estates

My Wine Man on Pegasus Bay. Pegasus Bay is one of New Zealand's most iconic family-owned wineries, established by the Donaldson family in the Waipara Valley of Canterbury — a region that has quietly become one of the country's most exciting cool-climate sources. Protected by the Teviotdale Hills, Waipara benefits from a warm, dry microclimate that allows full ripening while preserving natural acidity and aromatic precision. Their Chardonnay consistently sits among New Zealand's finest — structured, expressive, and capable of ageing with grace.

Tasting Notes

Lemon-straw in colour with bright clarity. The nose is layered and expressive — citrus zest, honeydew melon and white peach lead, followed by nectarine, subtle struck match reduction, and gentle brioche and toast complexity from barrel fermentation and lees ageing. The palate is concentrated yet refined, with vibrant acidity driving structure and length. The finish is long, mineral and subtly savoury.

Food Pairing

A Chardonnay of this depth and complexity calls for refined, layered dishes. We love it with Waitoa Accredited Free-Range Chicken Thigh Fillet from My Meat Man — roasted with herbs or served in a light cream sauce, the tender New Zealand free-range chicken is a magnificent match for the wine's citrus, peach and subtle toasted complexity.

Why This Is a Smart Buy

At HK$229, this is a fully mature, benchmark Waipara Chardonnay from one of New Zealand's most respected family estates. Complexity, structure and ageing pedigree at a level that significantly exceeds its price.
