Founded in 1818 in Mareuil-sur-Aÿ, Billecart-Salmon is one of the last great family-owned Champagne houses. The 2009 vintage was a warm, generous year that produced wines of exceptional ripeness and depth, yet Billecart's signature cool-fermentation technique kept everything beautifully taut. This Extra Brut expression strips away the dosage safety net, letting the fruit and terroir speak without sweetness to hide behind.
Tasting Notes
Finely effervescent golden yellow with beautiful warm golden reflections. Gourmet and fresh, with a rich palette of citrus and nutty aromas — grapefruit flesh, slivered almonds — layered with pastry and buttery notes of raw butter and white fruit jelly. Charming and structured, tense and beautifully balanced. Chestnut cream, fresh blueberries, and Breton shortbread mingle through to a persistent, all-in-finesse finish.
Style & Drinking Window
Medium-full bodied with fine, persistent bubbles and a taut acid backbone. Drinking beautifully now and will continue to evolve through 2030+. Serve at 8–10°C. Decanting not required, but 30 minutes in a quality flute will allow the aromatics to fully open.
