Tasting Notes
Pale, luminous gold in the glass with a delicate, almost ethereal clarity. The nose is gentle and immediately captivating — soft honey and vanilla lead with a light floral sweetness, a hint of ripe peach and pear, and a subtle warmth of toasted oak that speaks to the careful cask maturation. On the palate, The Chita is light-to-medium bodied and beautifully precise: honey and vanilla up front, with a gentle sweetness building through the mid-palate alongside soft grain character, a whisper of coconut, and a delicate spice — white pepper and a touch of cinnamon — that adds structure without ever disrupting the whisky's signature elegance. The Chita Highball
- 50ml The Chita Single Grain
- 150ml soda water (chilled)
- Ice (large cubes or a single large sphere)
- Garnish: thin slice of fresh lemon, inserted into the glass
Method: Chill a tall highball glass in the freezer for at least 10 minutes before serving. Fill with large ice cubes. Pour in The Chita slowly over the ice. Top gently with chilled soda water — pour down the side of the glass to preserve the carbonation. Stir once, very gently, with a long bar spoon. Garnish with a thin slice of fresh lemon inserted into the glass. The Highball is the definitive serve for The Chita — and this is the Japanese way of making it, with obsessive attention to temperature, carbonation, and dilution. The Chita's honey and vanilla sweetness is lifted beautifully by the soda, creating a Highball of extraordinary lightness, elegance, and refreshment that is unlike any other whisky Highball you will ever taste.
The Chita Mizuwari
- 50ml The Chita Single Grain
- 100ml still mineral water (chilled)
- Ice (large single cube)
- Garnish: none
Method: Chill a rocks glass or short tumbler. Add a large single ice cube. Pour in The Chita. Add the chilled mineral water slowly. Stir gently three times with a long bar spoon — no more. The Mizuwari — whisky with water — is the traditional Japanese way of drinking grain whisky, and The Chita is one of the finest expressions of this serve in the world. The water opens the whisky's delicate honey, vanilla, and floral aromas beautifully, creating a drink of extraordinary subtlety and refinement that rewards slow, contemplative sipping. This is Japanese whisky culture at its most authentic and most elegant.
