2023 Domaine Gautheron Chablis 1er Cru Mont de Milieu
Chablis' Most Classically Austere Premier Cru — Mont de Milieu
Mont de Milieu is one of Chablis' most respected and classically structured premier cru climats — a right-bank vineyard situated on the slopes above the Serein river. Where Les Fourneaux offers warmth and textural generosity, Mont de Milieu delivers precision, tension, and the kind of steely, saline mineral intensity that is the hallmark of Chablis at its most classically expressive.
Tasting Notes
Pale gold with a bright, steely clarity. Green apple, lemon zest, and white grapefruit lead with cool restrained elegance, followed by an intense thread of wet flint, crushed chalk, and oyster shell. The 2023 vintage adds a subtle note of ripe pear and white blossom. Medium-bodied with vibrant focused acidity, a taut linear structure, and a long saline mineral finish of exceptional precision.
Food Pairing
Mont de Milieu's steely precision and saline intensity demand the finest seafood. We love it with Hokkaido Sashimi-Grade Sea Scallops from My Meat Man — seared in brown butter with lemon beurre blanc, the sweet plump scallops are a magnificent match for the wine's wet flint, oyster shell and Mont de Milieu mineral intensity.
Why This Is a Smart Buy
