2024 Domaine Gautheron Chablis 1er Cru Mont de Milieu
A Premier Cru Chablis from Seven Generations of Family Winemaking
Chardonnay with breadth, freshness and a distinctly mineral finish. Domaine Gautheron's Mont de Milieu brings together the generous fruit of a sun-facing premier cru slope and the poise that makes Chablis such a rewarding wine for the table.
My Wine Man on Domaine Gautheron
Based in Fleys, Domaine Alain et Cyril Gautheron has been in the same family for at least seven generations. Its approach puts vineyard character first: careful farming and attention to individual parcels, with freshness providing the backbone of the wines rather than weight for its own sake.
Mont de Milieu lies on the right bank of the Serein. Its steep south- and southeast-facing slopes are sheltered by woodland above, while the limestone subsoil favours long, slow ripening. For us, the appeal is the balance: ripe Chardonnay fruit, an elegant texture and a clear sense of place.
Tasting Notes
The domaine describes its Mont de Milieu style as pale white-gold with delicate green reflections, opening with peach, apricot and white flowers. The palate is ample yet elegant, balancing fruit generosity with freshness and a mineral, floral finish. Expect a more textural expression of Chablis rather than a wine built solely around austerity.
Style & Drinking Window
Dry Chardonnay with medium-bodied breadth, fresh acidity and no red-wine tannic grip. Our suggested drinking window is 2026–2034 with good cellaring, enjoying it younger for its fruit and freshness or allowing time for greater complexity. Serve around 12°C. A brief 20–30 minutes in a decanter is worth trying if the wine seems reserved on opening, rather than giving it a long decant.
Food Pairing
The generous stone-fruit character and mineral freshness of the 2024 Domaine Gautheron Chablis 1er Cru Mont de Milieu make it an elegant match for Canadian Frozen Wild King Salmon Fillet from My Meat Man. The wine's peach, apricot and floral notes complement the salmon's rich, tender texture beautifully, while its freshness keeps each mouthful balanced, whether pan-seared with lemon butter, oven-roasted with herbs, or gently poached.
Why This Is a Smart Buy
At HK$279, this is a compelling way to explore a named Chablis premier cru from a long-established family domaine. The attraction is not a headline score: it is the combination of vineyard pedigree, food-friendly freshness and enough texture to make a simple dinner feel considered. A thoughtful step up for drinkers who already enjoy village Chablis.
