UTOPOS is a Barossa wine project focused on single-vineyard, low-intervention expressions of old-vine Barossa fruit. The wines are made in tiny quantities and are tightly allocated.
Tasting Notes
Deep crimson with bright fruit. Dark plum, blackberry, dark chocolate, dried herbs and a touch of spice. The palate is full-bodied with ripe tannins and a long, generous finish.
Style & Drinking Window
Full-bodied with ripe tannins. Drinking well now and through 2032. Decant 1 hour.
Food Pairing
A cult Barossa Shiraz deserves the finest beef. We love it with Australian Grass-Fed Cape Grim Rib-Eye Steak from My Meat Man — dry-aged and char-grilled medium-rare with bone-marrow butter, a magnificent match for UTOPOS's dark plum, dried herbs and velvety Barossa tannins.
