2007 Shirvington Shiraz
A McLaren Vale Rarity — Nearly Two Decades in Bottle from One of the Valley's Most Quietly Celebrated Estates
My Wine Man on Shirvington
Shirvington is a quietly celebrated McLaren Vale estate producing tiny quantities of structured, single-vineyard Shiraz from carefully tended low-yielding vines. The 2007, now 18 years in bottle, is at its peak — a rare opportunity to drink mature McLaren Vale Shiraz at its absolute finest.
Tasting Notes
Deep garnet with developing brick rim. Dark plum, blackberry, leather, dried herbs, tobacco and a hint of cedar. The palate is full-bodied with fully resolved tannins and a long, savoury finish of remarkable elegance for its age.
Style & Drinking Window
Full-bodied but resolved and elegant. Drinking superbly now at peak maturity. Decant 30 minutes. Drink within 5 years.
Food Pairing
An 18-year-old McLaren Vale Shiraz at peak maturity deserves a centre-of-the-plate cut. We love it with Australian Grass-Fed Cape Grim Rib-Eye Steak from My Meat Man — dry-aged and char-grilled medium-rare with bone-marrow butter, a magnificent match for Shirvington's leather, tobacco and silky mature tannins.
