Bollinger Special Cuvée Brut NV
The Champagne of James Bond — Rich, Structured, and Unmistakably Bollinger
My Wine Man on Bollinger
Bollinger is one of the great names in Champagne — a house of genuine substance, history, and uncompromising standards. Founded in 1829 in Aÿ, Bollinger has remained family-controlled throughout its nearly 200-year history, farming over 160 hectares of estate vineyards — an extraordinary proportion for a house of its stature. The Bollinger house style is built on Pinot Noir: rich, full-bodied, structured, and built to age. The Special Cuvée is the house flagship — a blend of around 60% Pinot Noir with Chardonnay and Pinot Meunier, incorporating a high proportion of reserve wines aged in small oak barrels, some for many years before release.
Tasting Notes
Deep golden yellow with fine, persistent bubbles. Rich and immediately compelling — ripe orchard fruit, baked apple, and citrus lead, layered with brioche, toasted hazelnut, and a subtle spice from the oak-aged reserve wines. On the palate, medium to full-bodied with a creamy mousse and the Pinot Noir backbone giving structure and weight.
Food Pairing
A beautiful match for The Bare Bird Premium Free Range Whole Boneless Butterflied Chicken from My Meat Man.
